Ingredients for 4 people
- 4 slices of rustic bread
- 200gr of authentic Feta Cheese
- 12 cherry tomatoes (we prefer cherry tomatoes because they are much sweeter than other tomatoes)
- G.E.T. | Organic Extra Virgin Olive Oil
- Dried oregano (while we generally prefer fresh herbs, when it comes to oregano always use dried. It has a much stronger aroma and taste.)
- Sea salt
- 2 cloves of garlic (pealed)
- 12 kalamon olives
- Fresh basil leaves
Execution
Prepare the topping first. That way the aromas will have the time to blend.
Wash the tomatoes and cut them into small pieces. The Feta cheese should be cut in the same way. Pit the Kalamon olives and cut them in halves. Put everything in a large bowl. Add a pinch of oregano, salt, one clove of garlic and also four leaves of basil torn into pieces by hand. Keep the other four aside to garnish the finished bruschette.
Pour two tablespoons of G.E.T. | Organic Extra Virgin Olive Oil and mix all together delicately. Put the bowl aside while preparing the bread.
Toast the slices of bread. Use a panini toaster for this, or you can toast them in the oven. Cut the slices at about an inch thick. Avoid cutting them much thinner since they should “support” the weight of the ingredients on the top. When the bread is ready take the other clove of garlic and rub each slice delicately. This will give the right “personality” at your bruschetta.
Now you are ready to put together the bruschette. Put a generous spoon of the topping on each slice of bread, an extra drizzle of G.E.T. Premium extra virgin olive oil, and with that our bruschette are ready to be tasted.
