Vinification: Produced from selected grapes of the individual vineyard by the classic method of red vinification with temperatures of fermentation around 23 – 25ο C and stay off the skins with the juice until the finish of the alcoholic fermentation. Following the alcohol and malolactic fermentation, it matures for 18 months in French oak barrels and other 18 months in the bottle
Organoleptic characteristics: Nose rich with perfumes of red fruits and notes of pepper and tomato. Mouth full, expressive with the brilliance of tannins that testifies his origin as ”Xinomavro”. Susceptibility in highly aging
Alcohol: 13,0 – 14,5% Vol
Sugar levels: 1,7 – 1,9gr/l
Total acidity: 5,5 – 6,0gr/l
It perfectly accompanies: game and red meats. It is opened an hour before serving and served at 18ο C
