Flavour Profile
Eye: Bright straw yellow color
Nose: Aromas peach, mature white fruits, nuts, herbs and slightly petrol.
Mouth: Rich, intense taste with moderate acidity, both providing flavor balance and a long aftertaste.
Serving: Temperature of 8 – 11°C, in a medium-sized glass
Aging in the Cellar: 5-10 years
Food Pairings
Accompanies a variety of flavors such as poultry and white meat stewed with vegetables and herbs in white egg-lemon sauce, roasted lamb, and pork with spices, soufflés or tarts with matured and smoked cheese, pasta carbonara, Asian dishes with pork and chicken, and fried rice with egg, vegetables, and white meat
Vinification
The grapes are hand-picked and placed in small crates. After the harvest, the grapes are taken immediately into the winery. Cooling the grapes at 8 °C, destemming and pre-fermentation maceration for 6 hours at 10 °C. Static settling and fermentation 60% with cultured yeasts and 40% with wild yeasts at controlled temperature (16 °C) in small stainless steel tanks. After fermentation the wine is left on the lees for nine months with frequent stirring, bottled and cellared for 3 more years.
